Serves 2
1 pack Malcolm Allan Sizzlers sliced
1 onion chopped
1 stick celery sliced
1 green pepper chopped
1 whole chilli
1 tablespoon Cajun seasoning
1 cup chicken stock
3 cloves garlic
1 can chopped tomatoes
1 tablespoon tomato puree
1 cup dry washed rice
1 pack prawns (raw or cooked)

In a large saucepan saute the onion, pepper, celery and chilli in oil for 5 mins. Add sausage and garlic, fry for 1 to 2 minutes longer

Add the tomatoes, stock, tomato puree and seasoning, bring to the boil. Reduce heat, cover and simmer for 15 minutes

Stir in the cooked prawns and rice and heat through
